Method

Instructions
  1. Heat the olive oil in a pan over medium heat and sauté the finely chopped onion until translucent.

  3. Pour in the chopped tomatoes and cook over medium heat for about 15 minutes until the sauce thickens.
  4. Using a spoon, make small wells in the sauce and gently crack the eggs into them.
  5. Cover the pan and cook until the egg whites are set but the yolks remain runny.
  6. Remove the pan from heat, add the sliced avocado, lime juice, salt, and pepper to taste.
  7. Garnish with fresh herbs and serve hot with bread or tortillas.

Notes

It's best to add the avocado at the very end or directly into the bowl. Leaving it in the hot pan for too long will cause it to lose texture and become bitter.
