I make this shakshuka when I want something lighter than the classic version loaded with tomatoes and spices. It’s not heavy, but still satisfying. And it doesn’t feel like “diet food” at all.
It’s also convenient because all the ingredients are simple: eggs, avocado, tomatoes, lime. Nothing exotic, but together it turns out to be more interesting than it sounds from the description.

Shakshuka is great because it’s easy to customize. You can change the spices, add herbs, or swap out the vegetables — and each time you get a slightly different dish, but with the same idea: quick, simple, and made in one pan.
The version with avocado and lime is just one of those variations that works well when you’re craving something fresher and lighter than the classic.
